So I made banana bread the other day and I thought that I’d share it with you as its a recipe thats so simple and I’ve used countless times. If you’ve got a load of bananas to use then grab a mixing bowl and the rest of the ingredients and get baking!
- 3oz soft margarine (75g) or very soft butter
- 4oz caster sugar (110g)
- 1 large egg
- 8oz plain flour (225g)
- 2 level teaspoons of baking power
- 4 medium ripe bananas
- grated rind of 1 orange
- grated ring of 1 lemon
- 2oz walnuts (50g)
First things first pre-heat the oven to 180°C and get yourself a loaf tin thats roughly 3.5 x 7.5 inches (don’t worry about this too much). Grease this and line with greaseproof paper. The reason I love this receipe is because its all in one so just add everything in together and mix – kind of. The recipe says says add butter, sugar and the egg in first and mix, then add the dry ingredients, this just makes it easier to mix but again it doesn’t really matter. The mixture will look a little dry at this point but don’t worry that’ll soon change. Get a little bowl and mash up the bananas with a fork then slowly add this along with the lemon and orange rind, you can add some walnuts now if you like as well! This time I used a wooden spoon to mix, not the best decision because I had two lots of mixture. I think that using a whisk is best as this is the best way to get some air in the mixture. My loaves were very dense but still good!
Put all of this into your loaf tin and level it the best you can. The recipe doesn’t call for this but if I have an extra banana to use up I like to slice it on the top and put along to top as decoration, its also really nice to sprinkle a bit of brown sugar on the top but this is optional. Pop this in the oven for 50-55 minutes then take out to cool.
